2 tbsp Oil
4 Garlic cloves – minced
2 Bell Peppers – thinly sliced
1 bunch Fresh Coriander
1 Hot Chili Pepper – thinly sliced
1 lb Pork – ground
1 lb package Rice Noodles (450g)
1 tsp 5 Spice Powder
1 Lime – juice
2 tbsp Sugar or Honey
2 tbsp Fish Sauce
Salt & Pepper to taste
This is fast and delicious.
In 2 tbs oil stir fry 4 minced garlic cloves and 2 tbs minced ginger for 1 min.
Add 2 sliced bell peppers, chopped coriander stems, 1 sliced hot chilli pepper and cook for 2 mins.
Add 1 pack of ground pork and strip fry until pork is cooked. Season with 1 tsp 5 spice powder, juice I 1 lime, 2 tbs sugar or honey, 2 tbs fish sauce, salt pepper to taste.
Cook rice noodles according to package instructions,
add to meat, top with 1 cup chopped fresh coriander
I added 2 tbs crunchy peanut butter and 1 tbs soy sauce for a peanut sauce. For a coconut sauce add 1 can coconut milk.
