Chicken Rice Pilaf


Whole chicken or 4 pieces of Chicken

Thyme to taste
2 Carrots – thinly sliced
2 Celery stalks – thinly sliced
Bell Peppers – thinly sliced
2 tbsp Oil
2 cups rice
4 cups water or stock
4 bay leaves
1 tsp salt
1 tbsp Pepper
1 tbsp Paprika
1 cup Parsley

Brown chicken in 2 tbsp oil on all sides until brown

Place in baking pan

In same browned pan from chicken add 2tbsp oil and sautee Onions, Carrots, Celery, Bell Peppers for 10 minutes until carmelized

Add Vegetables to chicken

Add 2 cups rice, water or stock, bay leaves, salt, pepper and paprika

Bake in oven 350 until rice has absorbed all liquid

Stir in 1 cup fresh Parsley
