Crimini Mushroom & Kale Pappardelle

INGREDIENTS:
  • 3 cloves Garlic -finely diced
  • 2 tablespoons Olive Oil
  • 1lb Crimini Mushrooms (or any mushroom) (thinly sliced)
  • 1 bunch Kale – Chopped
  • 3 tablespoons Pesto Sauce
  • 1 pinch Salt
  • 1 pinch Pepper
  • 2 450g package Papparadelle Pasta (or any pasta)
  • Parmiggiano Reggiano Petals to taste
  • Olive Oil
INSTRUCTIONS:
1.  Sautée garlic in olive oil

2.  Add sliced mushrooms and cook until brown

3.  Add chopped Kale and 3 tbsp Pesto Sauce

4.  Sautee for 5 minutes
5.  Season with Salt and Pepper
6.  Cook pasta according to package directions
7.  Add 1 cup pasta water to vegetables
8.  Add pasta and toss
9.  Top with parmiggiano reggiano petals and drizzle with Olive Oil
