Kale Pesto Pasta
This Kale Pesto Pasta makes for an easy weeknight dinner for the entire family.
Recipe type: pasta
  • 2 onions, diced
  • 1 bunch of kale, finely chopped
  • 1 box or bag of pasta, prepared according to directions and drained
  • 3 Tbsp olive oil
  • 3 Tbsp pesto
  • ½ lemon (juice)
  • salt (to taste)
  • pepper (to taste)
  1. In oil, sauté onions until golden.
  2. Add kale and sauté for 5 minutes or until wilted and cooked.
  3. Add pesto, lemon juice, salt and pepper and drained pasta.
  4. Toss and serve.
  5. Sprinkle with Parmesan cheese on top, if desired.
