Stuffed Portabello Mushrooms

Ingredients
  • 6 portabello caps small or 4 large grill
  • 1 cup couscous prepared according to package instructions
  • 1 red peeper roasted, peeled and diced
  • 2 zucchini roasted and diced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried oregano
  • ¼ cup olive oil
  • ¼ cup white balsamic vinegar
  • ¼ cup chopped, fresh parsley
Instructions
  1. Place mushroom caps on a serving platter.
  2. Mix all remaining ingredients together and taste for seasoning.
  3. Add salt if desired.
  4. Spoon couscous mixture onto mushroom caps evenly.
