Harvest Stew


2 large onions, finely diced

4 carrots, peeled and finely sliced

1 red bell pepper, finely diced

3 stalks of celery finely diced

1 lbs mushrooms, thinly sliced

8 potatoes, peeled and cut into 1 inch cubes

2 lbs meat of choice, stewing beef or pork loin or chicken

6 sprigs fresh thyme

4 bay leaves

1 lbs fresh diced tomatoes or 1 large can diced tomatoes

3 tbsp. oil

Water (to cover – based on size of pot)

Salt, pepper and Vegeta seasoning to taste



In a stock pot, add oil, brown meat on all sides a few minutes on each side and remove

In the same pot, add a little more oil, if needed, add onions and sauté for 5 minutes

Add carrots, celery, peppers and sauté for 10 minutes

De-glaze with half a cup of water if the vegetables start to stick on the bottom

Combine meat to the sautéed vegetable and add mushrooms, bay leaves, thyme and seasonings and water to just cover the meat

Cover and simmer on low for 30 minutes

Add potatoes and tomatoes and enough water to cover all the ingredients

Cover and simmer on low heat for 2 hours

Check that the meat is tender and falling apart, adjust seasons to taste

Serve with crusty bread
