Minestrone Soup

Making Minestrone Soup

INGREDIENTS

1 large Onion – finely diced
2 stalks Celery – finely diced
3-4 Carrots – peeled & sliced
3 cloves of Garlic – minced
1 head of Kale – chopped
4-5 Bay Leaves
1 bunch fresh Thyme – (or 1 tbsp dried Thyme)
1 Red Bell Pepper – finely chopped
1 can of white kidney Beans
1 litre of crushed Tomatoes
2 litres of stock

 

INSTRUCTIONS

In 3-4 tbsp oil – saute onions for 5 minutes

 

Add carrots, celery, peppers, bay leaves, thyme

 

saute for another 5 minutes

 

Add stock, crushed tomatoes and season with Salt & Pepper and slow simmer for 30 minutes

 

After 30 minutes – add chopped kale, beans, and simmer for another 15 minutes

 

If desired add 1 tsp basil pesto and stir into bowl.

 

Serve & enjoy ­čÖé
