The great thing about a salad is you can really add anything you want! I encourage you to get creative! For this Pear and Goat Cheese Salad, the key ingredients are pear and goat cheese, the rest is really up to you.

1 head of romaine lettuce *see notes for substitution options
1 bunch of pea shoots *see notes for substitution options
1 pear, sliced
1/4 vidalia onion, thinly sliced
1/4 cup sunflower seeds *see notes for substitution options
50 grams goat cheese
Salad Dressing Ingredients:
2 Tbsp sunflower oil
1 Tbsp pumpkin seed oil
1 1/2 Tbsp white wine vinegar
1/2 Tbsp Dijon mustard
Prepare all salad ingredients by washing and chopping as needed.
Mix all dressing ingredients together, stir well.
Lay ingredients on a serving plate and drizzle with salad dressing.
When it comes to salad, you can switch up the greens by using any variety that suits your fancy, like romaine, arugula or even boston lettuce. Get creative, mix and match and enjoy the results with a different combination every time.
Pea shoots are extremely healthy and add a little extra flavour to the greens in your salad. But, if you cannot find pea shoots, any additional shoot or greens will work out just as well!
Sunflower seeds are often a go to option for added crunch and flavour in a salad, but there are so many other nuts and seeds options out there! Perhaps consider trying pumpkin seeds or pecans instead.
