Perfect Roast Turkey

I love roast turkey and I make it often, not just for Christmas and Thanksgiving. I think that people struggle with making a delicious whole roasted turkey. Because it is big, they are afraid of under cooking, and what to do with leftovers. Most turkeys that I have had are usually overcooked and under seasoned.

Leftover roast turkey is not just for sandwiches! I use my leftovers to make a turkey and potato stew, pilaf with turkey, creamy pasta alfredo, kale, canellini bean and turkey soup… I can go on and on! Here is my recipe for the perfect roast turkey.

First, I never stuff my turkey because a stuffed turkey take longer to cook and this can cause overcooking. I always make my stuffing separate.

One 12 lb turkey
1 Tbsp black pepper
1 Tbsp Vegeta seasoning (or 1 Tbsp salt)
1 tsp salt
1 Tbsp dried thyme
1/2 cup olive oil


  1. Place turkey in a large roasting pan.

  2. In a bowl, combine all spices and oil together and rub the mixture all over on the outside and inside of the cavity evenly.

  3. On the bottom of the pan, add 2 cups water, cover pan and roast on 350 for 2 hours.
  4. After 2 hours, remove lid and roast for another 30 mins or until skin is crispy and golden.
