Roasted Sweet Potatoes with Siracha Aioli and Cilantro


5 sweet potatoes – washed cut into 1″ cubes
4-5 tbsp Oil
1/4 Mayonnaise
2 tbsp Siracha (to taste)
1/2 cup fresh Cilantro


In a baking pan add potatoes, salt, pepper to taste and oil

Mix thoroughly

Bake at 400 degrees for about 45 minutes flip occasionally

Cook until sweet potatoes are brown and caramelized

For Aioli

Mix together mayonnaise, siracha, 1/4 cup finely chopped Cilantro

1-2 tbsp of water to thin out the mayonnaise

Add water to the mayonnaise so you can drizzle easily

Remove roasted potatoes from baking pan into serving dish

Drizzle Aioli onto of potatoes and add remaining chopped Cilantro on top.
