Smashed Potatoes with Kale and Goat Cheese


8-10 whole Potatoes of choice (Yukon or Sweet)
1 head Kale – chopped
1 large Onion – finely diced
1 clove Garlic – finely diced
5 tbsp Oil
3/4 cup Goat Cheese



Boil whole potatoes with skins on until tender

Transfer potatoes Into a roasting pan with 3tbsp oil into pan

Flatten or smash the potatoes with spatula until about 1 1/2″ – 2″ thick, push sides together to make a round paddy

Season with salt & pepper

Bake smashed potato paddy’s on 400 for 20-30 mins turning once or until potato crispy on both sides.

Saute Onions in 2tbsp oil for 5 minutes

Add garlic & Kale and saute for 5 minutes until kale softens

Season with salt and pepper

Add crumbled Goat Cheese and mix until cheese melts and is combined

Put Kale mixture on top of Roasted Potatoes
