While squash is in season, I highly recommend you give this recipe for spaghetti squash gratin a try! Have you heard of Spaghetti Squash?
Spaghetti Squash is a unique type of squash that when cooked looks like strands of spaghetti. In fact, some people prepare this type of squash exactly the same way they would traditional spaghetti. This is definitely a much healthier version.
1 spaghetti squash
2 Tbsp oil
1 finely diced onion
1 cup milk
1 cup water
3 Tbsp flour
1 tsp salt
1 tsp pepper
1 cup grated white cheddar cheese
- Cut squash in half, remove seeds, brush cut side with oil and bake cut side down for 40 mins at 350.
- While squash is baking make sauce by sauteing onions in oil until golden, add flour, blend and add milk, water, salt/pepper and whisk until sauce thickens.
- Once squash is cooked through, take a fork and scrape the flesh into strands.
- In a baking dish, place squash and pour sauce on top, sprinkle with cheese and bake on 350 for 20 minutes.
