Tomato and Pepper Stew (Becar Paprikash)


4 large onions, diced

10 red bell peppers, diced

10 tomatoes, diced

1 cup fresh chopped parsley

1/2 cup oil (vegetable or canola)

Salt and pepper to taste

In a large roasting pan, combine onions, peppers, tomatoes, seasonings and oil

Bake uncovered on 400 degrees for 90 minutes, stirring every 20-30 minutes

After 90 minutes, vegetables should be reduced by half and juices should have concentrated

Add parsley and stir through

Serve as a side dish with meat, on pasta or with crusty bread
